From data to delicacies - Symrise uses AI to discover new flavor trends

Symvision AI™ - an AI-powered forecasting tool based on diverse data

Together with the AI experts at Arineo, Symrise has developed an innovative AI solution to predict emerging trends in flavors, ingredients, and product characteristics: Symvision AI™. AI supports the development of products that match consumer taste preferences and fulfil both functional and emotional needs, and helps identify new food trends at an early stage. In addition to data from social media monitoring and market research, the AI uses 10 years of proprietary data from Symrise. The company used AI algorithms to comprehensively process this data to better understand markets, consumer preferences, and industry trends. The result: using an intuitive interface, more than 8,000 flavors, ingredients, and product characteristics such as “probiotic” or “fairtrade” can be filtered by category and clustered by popularity. A comprehensive glossary offers additional insights into each flavor, ingredient, and product characteristic.

No wonder Symvision AI™ was awarded the Digital Transformation Initiative Award at the Gulfood trade fair in 2023. The AI solution offers unique insights for food manufacturers and can potentially transform the industry.

The challenges

Internal Symrise and external data were used to train the AI model. These were available both as structured and unstructured data, for example, from social media monitoring, and were very varied in terms of data formats. The terminology was also inconsistent within the source data. Over 8,000 flavors, ingredients, and product characteristics had to be harmonized and defined in terms of language, spelling, and naming conventions. The volume of data was enormous!

The intuitive dashboard, developed by front-end partner Talvaro, allows users to identify trends in numerous different flavor, ingredient, and product property categories, view the definition and emotional resonance of each of the 8,000 data points, and track their geographic distribution.
